'Ceremonial grade' doesn't exist in Japan. It's a label propagated through marketing to make shopping easier. But easier isn't always honest.
What actually matters? When it was picked (first spring harvest is best), how it tastes (sweet and umami, not bitter), and how it looks (vibrant green, not yellowy). That's it. No certificates. No grades. Just generations of farmers who know tea.
